Friday, I am welcoming you open arms!! This week has been a drag since Wednesday! Crawling back into my PJ's once I'm done with classes for the day :)

Jana and I have something up our sleeves and I am SOO excited to share!!!

I came across these Southerndoe t-shirts yesterday and thought they were super cute! May need to purchase once they get more in stock ;) I also love supporting businesses from the USA. Another thing I love...their motto: "Strength is Beauty"

Udon Noodle Soup: Recipe
Over Christmas break, my family and I went to one of the best Japanese restaurants, called Komé. They had the most amazing soup there that I just had to find it and make it myself. My version was definitely NO where near Komé's, but it will have to do for now!
I did make a few changes to the recipe:
-Added 2 tbsp of Lite Soy Sauce to the broth before it boiled
-Used steamable veggies, then added to broth once cooked
-Wegman's Asian Classics Udon noodles (frozen); let thaw for 2 days in fridge.
-While broth was boiling, blanch noodles for 1 minute (not much longer or they will get soggy)
-Next time: would add green onion for more flavor
