I can't believe it's already Wednesday! This week is flying, but I'm not complaining!!!
I heard a GREAT recipe this morning....HEALTHY (yes, healthy) pancakes!!! I was so excited to try it...and I thought they were pretty good!! I was expecting a thicker pancake consistency but oh well!
Ingredients:
1 banana
2 large eggs
2 drops of vanilla
A sprinkle of semi-sweet chocolate chips
Makes 5-6 pancakes
Time: about 10-15 minutes including prep
I first used a whisk to mash up the banana then added the 2 eggs. The batter will be a little lumpy due to the banana but I tried to whisk as much as I could it so it'd be pretty smooth. Then add 2 drops of vanilla for flavor, otherwise it will taste like mostly banana.

I used a 1/4 cup to measure out the batter and added a few chocolate chips :)
Also, make sure you keep a close eye on them while cooking because they cook SO fast. I wasn't paying as much attention, hence why mine are slightly burned in the picture below!
Although they're thin, they're very filling. I made five but probably only ate 3 or so. If you try them, let me know what you think!
